Marzipan Plum Cake
with marzipan cream and almond caramel sauce

Yeast dough

Milk 500 ml
Topping (fruit layer)

400g Marzipan Simply pure

Eggs 4

Cinnamon powder 2 tsp

Plums 4000 g

Sliced almonds 100 g
Topping

Sliced almonds 200 g

Sugar 200 g

Vanilla sugar 1 packet

Cream 150 ml
Here’s how it works:
Crumble the yeast and dissolve it in lukewarm milk while stirring.
Mix the flour, butter, salt, sugar, eggs, and yeast milk in a bowl to form a smooth dough.
Then shape the dough into a ball and let it rest covered in a warm place for 30 minutes.
In the meantime, mix the marzipan with the eggs and cinnamon into a smooth cream.
After resting, knead the dough on a floured work surface and roll it out onto a greased baking tray.
Spread the marzipan mixture over the dough.
Place the halved and pitted plums tightly on top of the dough with the cut side facing up.
Sprinkle with sliced almonds and place in the oven.
Preparation of the topping
Toast the sliced almonds lightly in a pan over medium heat, then add the sugar and vanilla sugar.
Once the sugar has melted, remove the pan from the heat and slowly pour in the cream while stirring.
Bring everything to a gentle boil again over low heat.
