Marzipan cookies
These marzipan cookies are a delicious treat for all lovers of Mampfmandeln and fine marzipan/marzipan paste. The combination of a soft texture, sweet aroma, and an optional hint of rum makes them ideal for the Christmas season or any coffee break.
Ingredients

Marzipan / marzipan paste – 100 g

Butter 100g

Powdered sugar – 70 g

Egg yolk – 1 piece

Mampfmandeln – 100 g

Flour – 100 g

Baking powder – 1 pinch

Rum – 1 splash

Here’s how to do it:
- Break the marzipan into small pieces in a bowl using a fork and mash it.
- Beat the butter and powdered sugar with a hand mixer until fluffy.
- Add the egg yolk, ground almonds, and mashed marzipan. Gradually knead in the flour and baking powder. Add rum if desired.
- Mix everything into a smooth dough.
- Cover the dough and let it rest in the refrigerator for about 30 minutes.
- Line a baking tray with baking paper. Roll out the dough on a floured surface, cut out cookies, and place them on the tray.
- Bake in a preheated oven at 180 °C (top/bottom heat) for 10–15 minutes.
Tipp:
The cookies can be beautifully decorated, for example with chocolate or powdered sugar. Stored in an airtight container, they stay fresh for several days.
