Winter-Cantuccini
Crispy winter cantuccini with chocolate, spices, nuts and Lemke marzipan. Baked twice, intensely flavorful and perfect with coffee or tea.

Dark chocolate 100g

Sugar 150 g

1 packet of vanilla sugar

Flour 300 g

Baking powder 1 tsp

Gingerbread spice 1 tsp

Steps
Melt the butter, dissolve the dark chocolate in it, and let the mixture cool briefly.
Mix sugar, eggs and vanilla sugar in a bowl until creamy.
Stir in the butter-chocolate mixture.
Add flour, baking powder, gingerbread spice and cinnamon and mix to form a dough.
Incorporate marzipan, ground almonds, pistachios and hazelnuts into the dough.
Shape the dough into three equal strands.
Place the strands on a baking sheet lined with parchment paper, flatten them slightly and brush with milk.
Bake in a preheated oven at 180 °C (top/bottom heat) for approximately 25 minutes.
Remove the strands from the oven and let them cool for about 15 minutes.
Slice and bake for another 5 minutes until crispy.
Let it cool and enjoy.
