What is marzipan made of?

Our "Simply Pure" marzipan paste is the highest quality paste, with the highest almond content and the lowest sugar content.


The exact composition is defined in the "Guidelines for Oilseeds and Confectionery Made Therefrom": Marzipan paste is a mass made from blanched/peeled almonds. The added sugar content is a maximum of 35% and the almond oil content a minimum of 28%, both based on marzipan paste with a moisture content of 17%. Defitted bitter almonds and mountain almonds are not used in the production of marzipan paste.


In contrast, marzipan is a mixture of marzipan paste and at most the same weight of sugar, i.e. a ratio of no more than 50:50.


Our premium marzipan, "Heavenly Grace", contains, according to the guidelines for confectionery (Federal Association for Food Law and Food Science eV), at least 70% of the marzipan raw mass.

The fundamental difference lies in the recipe. Marzipan is made with almonds, while persipan uses apricot kernels.

Lemke's marzipan contains no animal products. The main ingredients are almonds, water, and sugar.

Yes, all varieties of Lemkes marzipan are gluten- and lactose-free. CAUTION! Our slices are coated in dark chocolate, which is why milk components and gluten-containing grains are only found in these.

Lemke uses bitter almonds in a very small amount to enhance the unique marzipan flavor. But you don't need to worry about that; our laboratory conducts regular analyses to monitor the hydrocyanic acid content.

Marzipan is generally made without alcohol. Please check the ingredient lists of individual products for details. It is possible that the fruit paste used for flavored marzipan may contain a small amount of alcohol.

Due to its high sugar content, marzipan is classified as a confectionery. However, the high almond content is a dominant characteristic of marzipan. In our premium marzipan "Heavenly Grace," which also contains roasted almond pieces, the almond content is 62%, followed by our "Simply Pure" marzipan paste with 54%. Almonds contain a lot of fat, but this consists of healthy, essential fatty acids that play an important role in the body. Studies have shown that regular, but moderate, consumption of almonds can reduce the risk of cardiovascular disease and lower cholesterol levels. So, if you look for marzipan with a high almond content and consume it in moderation, there's nothing wrong with enjoying this treat.
