Who doesn't love almonds covered in sugar? Especially during Advent, when their sweet scent fills our noses at the Christmas markets. But you can also easily prepare this sweet snack at home.

Ingredients 250 ml of water 300 g sugar 1 packet of vanilla sugar 1 teaspoon cinnamon (optional) 500 g almonds (preferably Mampfaldeln ) |
Tip If you didn't use chewy almonds, roast the almonds in the oven for 15 minutes beforehand. This will give the roasted almonds an even better flavor. |
How it works
- Bring water to a boil in the pan.
- In the meantime, mix the sugar with vanilla sugar and cinnamon.
- When the water boils, stir the sugar-cinnamon mixture into the boiling water.
- Allow to simmer briefly until it reaches a light syrup consistency.
- Now add the almonds.
- Continue to bring the mixture to a boil over medium heat, stirring occasionally to prevent the syrup from burning.
- A thick, glassy mixture is formed. Now be careful! Just a moment longer and the sugar will crystallize again. You can tell this by the typical texture of roasted almonds, the whitish color and the crystal structure.
- Place the almonds on a baking tray lined with baking paper to cool.
- The sugar is still very hot, don't burn your nose while snacking!
